Total Alkalinity represents the amount of bicarbonates, carbonates, and hydroxides present in water. It represents the waters degree of resistance to change in pH.

Essentially, a low total alkalinity reading means the pH will change rapidly (from a variety of sources including chemicals and topping up water). A too high total alkalinity will make pH adjustments more difficult.
